I know an Italian with surname Paredes also, very much Latinate, from paretis 'wall'. Perhaps your Irish family knew a bit of Latin, perhaps they used the Latin Paretis as a Baptismal record form of something like the Connaught Paraic version or perhaps it was after a family friend or connection to Spain, Portugal or Italy. You'd have to do the digging back to find names and incidents around the naming itself to make a good guess as to what was intended.
