Those are lovely! I like both Gianna and Elise a lot.
I agree with Chrisell about the pronunciation of Gianna. It's like Johnna, and gee-anna sounds bad indeed to me .. just in case you are thinking of pronouncing it like that, which I assume you're not, since it's your favorite name and you have probably checked it out.
Grace as a mn doesn't excite me since it's so common, but it's a pretty combo. I don't know about the set really matching, since Gianna sounds Italian to me and Elise something else, but I think it's not too strange; neither name dominates too much.
