Gregor. If you want to honor someone it's my belief that you should use their name. I have several names in my family that I probably wouldn't like if it weren't for the association to a certain person. Because that person meant so much to me, the names means a lot to mean and I wouldn't dream of trying to honor a person and his name by just using the same letter. That doesn't mean much.

So my answer is obviously that I think you should use Gregor. It's a middle name. Pretty much anything goes when it comes to middle names.
