Chad and Casey have welcomed a second set of triplets into their family! Miles, Maxwell, and Emerson join big sister Roslyn and big brothers Henry, Cooper, and Jack in the Stone family. Chad and Casey had not originally planned on having a large family, but they are really enjoying it, and the children are thriving from having a close knit family.
Casey recently entered a local cooking contest. The theme of the contest was easy recipes for families. Casey entered her Taco Casserole recipe and took 2nd place. Her recipe will be put into a cookbook along with the 1st and 3rd place from her contest, and other 1st-3rd place winners from contest during the year.
Taco Casserole
2 lbs. ground beef
3 c. tomato juice
2 pkgs. dry taco seasoning
1 7 1/4 or 7 1/2 oz. pkg. Nacho Cheese or Taco Chips (Doritos Style)
2 cups sour cream at room temperature (it spreads easier)
2 cups shredded cheese
Brown beef and drain off fat. Add tomato juice, taco seasoning, and crushed chips. Pour into a greased 9x13 pan. Bake 30-35 minutes at 350 degrees. Add cheese to the top of meat mixture and bake 10 minutes more. Add sour cream over the cheese and bake 5 minutes more. Can serve with/over lettuce. Try topping with salsa or picante sauce. Makes 9-10 servings.

Now that sounds really good.
