On Name Opinions, someone wrote about meeting a young boy named Emet. He stated that his name was hebrew for truth, and he had hear his rabbi use it

"Emet" means "truth" indeed in Hebrew, bt I haven't heard of it as a name.
I have however heard the surname Emmett used as a given name; it is stressed on the first syllable (and I would guess Emet is on the second), but if namers are used to hearing Emmett then Emet might not seem like much of a stretch.
The Hebrew vocabulary word EMET is also stressed on the first syllable
