Names with "the" in the middle
Is there a term to describe names with "the" in the middle, such as Pliny the Elder, Catherine the Great,...
I've been scouring the net looking on my own, but it's difficult to compose the proper search terms.

If you want to google those...
(In case you need info)
Just place quote marks. E.g. "Catherine the great" and google will keep the search strictly as you typed it.

Those aren't actually their names, that's just how they're called in history, or sometimes how they were called contemporaneously.
Many referred to as "the elder" was just to differentiate them from their junior (sometimes called "the younger"), and those referred to as "the Great" were mostly because they brought about many good changes during their reign. Sometimes it's just a nickname from a description, such as Pepin the Short or Richard the Lionheart.

Those are known as "epithets," though that's a word with more than one meaning. You could try using Googling epitheton and necessarium or epithet and nickname to narrow down your search.
