My adopted daughter is from bulgaria. Her name is Veska Sofkova. just wondering the meaning!

Veska is a diminutive form of Vesela, Veselina or other names that start with ves-. I have also seen it as a diminutive of Vasilka.
Sofkova (I assume that's her middle name) simply means daugher of Sofko, Sofko being her father of course. Sofko is a colloquial form of Sofroni (see Sophronius), though some people use it as a male version of Sofia.

Veska is probably a form of Vesna. (In Cyrillic alphabeth is the letter "k" written almost the same as "n").
