I say ie-AN-thee. I prefer Iolanthe which I really do like but probably wouldn't use as a first name because it'd be too easily mispronounced.

Though--and I've just said the name out loud several times--it's actually half-way between IE-an-thee and ie-AN-thee.
Either way, Ianthe brings to mind a dark blue-eyed girl with long black hair. She's very beautiful and delicate, but not frail. She's a poetess, or a shepardess, or maybe even a fairy princess.
The name itself is very feminine, even frilly. And, as implied above, I think it sounds like a name out of an old-fashioned poem. Very sweet.
