Personally I love Elizabeth, and think both it and Katherine are timeless, very classy names that are spunky at the same time.
However, just to see, I checked popularity for 2005. Elizabeth was no. 12 and Katherine no. 36.
Katherine, for me, would be too close to all the others named Kathryn, Catherine, Katharine, Caitlyn, Katelynn, etc., etc. And they almost all, as you say, seem to be called Katie/Katy/Kate. So she might well end up in the "sea" of others with basically the same name.
So I might well go with Meredith. I would consider Meredith Leigh, to keep the tradition going. I think Meredith also has a classy feel. Your husband will love the name once it's attached to a cute baby girl that he loves!
