I'd go with Meredith Cait, assuming your husband likes it enough. Elizabeth and Katherine are both names that will forever be flooding classrooms, no matter what age. Nobody will pay much attention to the beauty of her name. It's like when you see a John or a Mike. Meredith, on the other hand, is classic and underused in today's world. Not to mention, I think it has a much nicer sound.
