If it were me, I'd call the child Lettice and pronounced it leh-TEES. It may not be "correct", but -ice endings can be pronounced that way. Who could tell me that I was wrong? Besides, many people are going to pronounce it that way anyway (after all, who would give a child a name that sounds like "lettuce"?).
Yah, the first thing I thought of was lettuce. YUM! Anway, I personally would pronounce it Lett-ees. Sort of like Letitia, but instead of the -ia an -ice. I wouldn't use if for a child, and on paper it would look too much like Lettuce imo.
