While I love the name Samantha, I think the nn Sam is great. It's short, simple and cute and also easy to remember!

I've known quite a few girls named Samantha who have been called both Sam and Samantha. If I were you, I would introduce myself as Samantha. Your friends will probably call you Sam at least sometimes anyways.

Depends. Do you want your friends to address you as Sam? Do you feel like people are being more familiar / casual with you when they call you Sam, or when they call you Samantha? I'd pick whichever one gives you more of a feeling of distance, and let your good friends call you the other one. If I were you, I'd introduce myself as Samantha to profs & guys, and as Sam to the girls in the dorm. =D
