Both are food related, though Colby is a better choice imo. Kobe sounds like you are desperately trying to seem fancy when you aren’t - or like you are copying a one and only at this point. I dislike both of them.
If you're in an area where Catholicism is likely, it could have been Kolbe. There was a priest killed in Auschwitz with surname who has since been canonized and it seems to be a not unpopular choice in highly some religious circles.

Our dog was named Kobe when we adopted him. He was only one year old and quickly began responding to his new name. Colby is a cheese.

Kobe doesn't happen in South Africa, but Kobie does, as a nn for Jakoba. Pronounced KOO_ERbi, where the R is not pronounced. Or a bit like cooer, if that exists as a descriptor for a pigeon? Once again, no R is heard. It isn't used as a male name or nn at all.

I hate both, especially Kobe.
I don't like Colby, it's one of those bland, WASP-y ambisexual surname names that has no real personality beyond bland and WASP-y.
Kobe is okay, but very associated with Kobe Bryant and with Kobe beef. I also have known of a couple of dogs named Kobe.
