The most interesting family names that I wouldn't mind using, that would actually feel like they'd be honoring are Amzi and Azalea. Living (older) family with a name that seems sorta interesting, that I maybe wouldn't mind using - Hollis (f).
I'm not directly related to or knowledgeable about most of these people, but this is a longer list of names that stood out to me when I clicked on various linked parents/siblings/spouses of some relatives on findagrave a few years ago:
5x - Isaac
4x - Hiram, Virgil
2x - Homer, Omer, Finis, Otis, Felix, Oscar, Bertram, Willis, Thomas Jefferson, Napoleon Bonaparte, Odet/Odette, Moses/Mose, Elias/Elijah, Marion, Columbus, Pink/Pinkney
1x - Amzi, Elkanah, Emron, Emra, Solon, Solomon, Creed, Sharp, Rhine, Rosseau, Claude, Justus, Galen, Luro, Phaltiel, Roscoe, Artice, Dellos, Dallas, Delmas, Eben, Casper, Roma, Lannis, Thorican, Armand, Phares, Ozias, Eldred, Elmer, Archibald, Hotspur, Kora, Estel, Doctor*, Ezra, Ira, Elvis, Irving, Irby, Enoch, Sherman, Otho, Dewey, Rojas, Vineyard, Williford, Wilbur, Rodaniel, Oka, Gil, Gilliam, Neva, Lucian, Leonidas, Cornelius, Berry, Littleberry, Perry, Cyrus, George Washington, Benjamin Franklin, Fillmore, Ansel, Abner, Chester, Almond, Walter, Ezekial, Isaiah, Harper, Harley, Sylvester, Yandel, Habra, Cyrus, Lars, German, Roland, Camillus, Jarvis, Gervais, Shepherd, Templeton, a bunch of other surnames
