Longoria sibset

An entire sibset? Definitely not. I think I would avoid even two siblings having the same initials. I could see using the same starting initial if I truly loved the names, but still, unlikely.
I don't have an issue with the initials EJ.
What I'd name 4 girls with EJ initials if I had to:
1) Eloise Juliette
2) Evangeline Jacinthe
3) Estelle Jacqueline
4) Eulalie Josephine
If I had to select the same initials, I'd probably do some combination of MC just because that would be easiest for me.
1) Margot Cosima
2) Madeline Claire
3) Matilda Charlotte
3) Miranda Catherine

I wouldn't use the same initials, or even the same initial, on siblings. I know a family with a tradition of A names: Antoinette and Alan; Aileen and Annette; Anthony, Amanda, Richard (his mother got rebellious!) and Angus.
EJ for sibs? Definitely girls only; IRL, I wouldn't.
Elinor Juliet
Evelyn Joanna
Eloise Jennifer
Elspeth Joy

I like Esmeralda Josephina a lot. The others seem dull in comparison.
Eva Jacqueline and Esmeralda Josephina (prefer Josephine) are pretty. I like a lot of E and J names, but I wouldn’t name siblings with all the same initials irl.
1. Esmeralda Josephine (I’m going to steal it, I love it)
2. Eliana Joy
3. Evelina Juno (I don’t think this works that well though)
4. Emilia Juliet

Emily Jeanette is really cute, and I'm normally not into Emily.
I'm guessing that the EJ theme came from a combination of the parent's initials (E for Ella/Enrique and J for "Junior"). Using that pattern, my set would be CS. I could probably find some names I like using those letters....
Cora Sylvie
Catalina Suzette (or Catherine Suzette)
Calliope Simone
Celeste Sophie
I'd love to use Shauna as a middle name but none of my current C-names look right with it.

I like Chloe Shauna!
I love E- and especially Eu- names for girls, so I'd be tempted to do this (with C- middle names):
Eudora Cecily "Doe"
Eugenia Clarice "Gene"
Eulalia Constance "Lally"
Euphrasia Celestine "Effie"

Eulalia Constance "Lally"
Euphrasia Celestine "Effie"
