The only justification I can think for giving it another n would be if you truly combined Eve and Lynn, and pronounced the name eev-lin, with two syllables. In that case I would say it would be so much better to write it Eve-Lynn or just Eve Lynn. Either way, if you write it Evelynn, you’re going to have either lifelong spelling problems or pronunciation problems unless you separate the two names.
