Since I live in an area with a large Polish population, I've met a few Katarzynas in my life. Most of them go by Kasia, though I think one (who was more Americanized) went by Katie. I quite like the sound of Katarzyna, and if I were Polish it's a name I would consider using.
My favorite form of Katherine is Katarina, though, and it has been for years. For a nickname, I actually prefer Rina to all the others (though Kat is likely second)!
Edit: Katrina is also nice, and reminds me of Sleepy Hollow. But then I remember the hurricane...
