As a personal name, I'd say You-niss. As a (very distinguished, where I live) girls' school, it's you-NEE-see. I wouldn't use it myself, but it's perfectly acceptable.
In the USA the name is now rare. It's been mostly used the last few decades by Korean-Americans to name daughters, because Eun or Yoon is a common syllable in Korean names so it links by sound with their own culture.

I pronounce it YOO-nis. For me it's inextricable from the one Eunice I knew, who had a very large personality, so it's hard to really have an opinion on it as a name. Generally I'm not fond of the Eu sound, though.
