As someone named Elizabeth, I'll be happy to answer these questions.
1. I don't go out at all, but the times I've been out, I've been around Elizabeth's my age (I'm born between 1995-1998), a few millenials (1980's) and slightly older ones (1970's). None of the children I've been around were named Elizabeth. I think it's a name slightly drifting away like Mary is.
2. Hmmm... It's fine to just be called by a full name. It depends on Elizabeth. I personally don't care.
3. I always thought Liz was a common nickname. Lizzie is okay. I do like the Lizzy spelling more. Lizzie is Lizzie McGuire to me. I was called that in 2nd grade by a birthday boy, lol. It was cool.
4. Lizzie is okay. Ellie is a name by itself, imho. I did hear it's short for Eleanor or Ella.
5. Lizzie, but spelled Lizzy, Ellie is kinda cute too. I'm partial to Liz, I also do like Elise too.
6. I've had the pleasure of meet soo many "fellow" Elizabeths in my life. It was interesting, some were sweet, some were nasty, some were just okay. It is so bizzare calling someone to get their attention who has the same name as you.
I do think my name is boring time from time, and I get jealous of other girls even with the less popular names like Serena, Daphne, or Avalon. I plan on giving my children uncommon but not too crazy names with meaning.
