IMO the S versus Z doesn't matter at all.
But if you are pronouncing Eliza with LIEZ and Elisabeth with LIZ ... even if it were Elizabeth, it'd come off artificial to me, like one of those "having cake and eating it too" nickname-tricks.
Eliza prn -LIEZ- isn't really a *nickname* for Elizabeth in English, but a *form* of it, to me.
Eliza : Elisabeth :: Harriet : Henrietta.
If you're saying Elisabeth as -LIZ- and Eliza as -LEEZ-, then it would seem much more like an actual nickname, and not a 2-for-1 gimmick.
