Mae is, phonetically, nonsense. May is perfectly acceptable and does not need to be tweaked.
Don't know Japanese; no context. I am familiar with Mei as a Chinese name: the person I know, Chinese from Shanghai, married to a Scotsman, pronounces it like May: her full name which everyone uses is Mei-Lin. Which is pretty! She tries to persuade people to call her Apple, or even Plum, but nobody does.
