Depends on what you mean by "work". In the USA, someone could name their kid Priest, and if the kid's name was Priest, people would call him Priest, assuming he didn't change it, so in that sense, it would work.
If by "work" you mean he could bear the name without causing inner eyerolls in others, then it probably wouldn't work.

Sure, but it would probably get a lot of eyerolls. It fits in nicely with Kim Kardashian's kids' names, which says it all.

While occupations are sometimes used as names, Priest is not just an occupation; it is also a title. It would be akin to naming someone Pastor, Reverend, Doctor, Professor, Mister, or Sir.
