I love both, but Betsy gives me more of a down-home feel where Edith is cosmopolitan.
I'm the other way. I really enjoy Betsy, which seems cheerful and friendly, even though the only Betsy I've known IRL (sister of a friend, full name Elizabeth) was anything but.
Edith retains a little medieval charm, but not enough. Too breathy. My late MIL was Edith Elizabeth, but nobody ever used either - she was universally known as Bunty, including by her grandchildren. And the only other Edith I've ever known was/is Edith Linda Marie, which sounds OK but none of them seem to go well with the others!

Though I don't really like Edith, I have to admit that Edith and Betsy are very cute together. I do like Betsy, though it isn't a favorite and I far prefer other nicknames for Elizabeth.
I don't care for Betsy either, along with Bess and Bessie it's got to be my least favourite nickname for Elizabeth.
