I think that Daffy is a terrible nickname because of Daffy Duck (and I dislike the sound), but you don't seem bothered by it, so there's that. However, there's no way of knowing whether or she will love or hate the name. Daphne is a beautiful name, and comments like your mother's should not deter you from using it.
