I prefer the tidier look of Evelyn, but I've never heard Eveline said with a -line sound. My mother attended the Eveline High School, which was named after some prominent person during their lifetime; it was pronounced EEVlin at all times. I have heard Eveline sounding like EVaLEEN, but I dislike -een names and I'm glad it doesn't happen very often.
Either way, I've never known the full form actually used. It always shortens to Eve. Which is pleasant.
