I prefer Mandy out of them all, and only as a nickname but if it has to be used as a full name then I'd go with Mandy. It's popular and common use spelling, plus it just looks better.
Out of Mandie, Mandi and Mandee. I'd pick Mandie, it looks the best out of the three. Sorry but I think Mandee just looks cutesy and trendy.
