I prefer the look of Wilhelmina, but Willemina is probably easier to live with outside of Western Europe. I don't really like the idea of Will on a girl, but I'm not fond of male nicknames on girls in general (I changed my name from Samantha to my middle name just to avoid Sam!) but Willa and Mina are always options as well.
I'd probably stick with something simple in the middle, like Willemina Ruby from your list.

I prefer Wilhelmina, but Willemina is ok. It can come across as old, especially in some of your combos. I'm not saying they're bad, but Willemina Gertrude sounds like someone's great great grandma, not a baby.
Willemina Ruby sounds very good. Most of the other ones make the combo sound suitable for an older woman only.
Willemina / Wilhelmina is a bit of an old lady name to me, and when I hear them (mainly Wilhelmina) used these days, it's usually as a MN. Willemina does look a bit younger then Wilhelmina. I absolutely adore Wilhelmina but I dislike the way Willemina looks. It seems... mm, infantile, perhaps? Like someone who wasn't sure how to spell it gave it a go. I like the nn Mina.
