Eloise and Theodore are very cute together, though both mn's are not to my choosing. I'd prefer something a little less stuffy and maybe more fun and fresh for the mn. Have you thought of using a flower name for your DD? What about:
Eloise Poppy and Theodore Luca
Eloise Daisy and Theodore Samuel
Eloise Lavender and Theodore Maxwell
Eloise Ivy and Theodore Oscar
Eloise Tessa and Theodore Caleb
Eloise Matilda and Theodore Hugo
Eloise Tabitha and Theodore Isaac
Eloise Cora and Theodore Rhett
Eloise Freya and Theodore Remy
Eloise Arabella and Theodore Felix
Eloise Talitha and Theodore Reuben
Eloise Keira and Theodore Miles
Eloise Poppy and Theodore Luca
Eloise Daisy and Theodore Samuel
Eloise Lavender and Theodore Maxwell
Eloise Ivy and Theodore Oscar
Eloise Tessa and Theodore Caleb
Eloise Matilda and Theodore Hugo
Eloise Tabitha and Theodore Isaac
Eloise Cora and Theodore Rhett
Eloise Freya and Theodore Remy
Eloise Arabella and Theodore Felix
Eloise Talitha and Theodore Reuben
Eloise Keira and Theodore Miles
Perfect :) will they have nicknames?
I can see how Teddy might be appealing for a little boy as it is a very cute nickname. However you don't want to get into a situation where you have become very attached to Teddy but Theodore is now 5/6 years old and ready to grow out of it.
My advice would be to see how it goes, IRL nicknames usually come on their own with no warning and the child themselves with decide whether to let them stick or not. :)

They are lovely!
Theodore has been on my list as a back walker for some time but it's really starting to grow on me, and while I am not the hugest fan of Eloise I think it is very aristocratic and suits Theodore well.
The middle names suit both the first names and each other by continuing with the royal/upper-class feel. All in all, very pleasant names :)

I think they sound lovely and classic.
I adore Eloise and might use it myself one day.
