I think they're both classics and you can't go wrong with either.
But personally, I like Caroline a lot more than Elizabeth. It's probably because Elizabeth feels very "been there, done that" to me. It's everywhere. I don't come across many Carolines, though. I also prefer the light, open sound of Caroline to the heaviness of Elizabeth.
If I had an Elizabeth, I'd try to avoid Liz. I like Beth, Betty/Betsy, Libby, and Eliza as nicknames (though I'd be more inclined to use Eliza on its own.) I think I would call Caroline by her name in full, maybe occasionally Cara.
