I do like Cole better although Colton does match the length of Jackson a bit better. You could do Colton with the nickname Cole but then it would seem unbalanced unless you did Jackson with the nickname Jack! So unless you want to use Jack as a nickname I'd go with Cole and Jackson.
Cole Matthew is really nice and I prefer Jackson William, or you could do Cole William and Jackson Matthew! :)
Jackson Reece Harris would be too much because all of them are rather surnamey.
