Gosh. I don't know if I could count the Katherine/Kathryns I know. I can tell you I know zero people who spell their name Catherine.
The only time I see or hear of Kathy being used is when their name is spelled Kathryn. The Katherines I know tend to go by Kate, Katie, Katy, Kat, Kitty or Kay.
My favorite spelling is Catherine and now that you mention it I think Cathy would be adorable on a little girl. Otherwise, the nickname Cate would be used.
