The reason Ember and Amber sound totally different is because the actual vowel sounds ("e" and "a") are being pronounced. Unaccented vowels often turn into the schwa sound ("ə", sounds like "uh"), and that is why Alyssa and Elissa sound almost the same. I'm talking about my own accent, of course.
