Ella would work, and it's less fussy than Ellabeth. Bethan is a Welsh form of Elizabeth, as Megan is of Margaret, so that would work very well. Bethany as a nn for Bethan, yes perhaps, but Bethany has been used a lot in recent years so I'd avoid it if possible.
What about Elsabe? Pronounced EL-sa-bee, with an s, not a z; it's likely to be pretty different where you live, though here in South Africa we're all familiar with it.
