I rather like Elisabeth. It's gentle and graceful. Ellabeth is cute, maybe too cute and best left as a family pet name. Bethany works, but it's a lot of effort for a nickname, because it's a whole other name in itself. I'd say Ellie or just Beth are your best bets.
