I didn't forget it, but since it's just speculation I'd rather wait to hear if it's true and any possible middle names or if Leo is a nickname for anything, etc.

Ah, I read a interview he did where he said he chose to go by Bardem rather than Encinas as an actor, though he had been expected to go by Encinas. I must not have understood it clearly.
It's possible Leo is short for something, but that's more than likely his name as a friend of theirs (a director) called the baby that. I doubt he'd call the baby by some random name lol

Well, from the Spanish people I know most go by their first middle name (like Penelope does), so it was unexpected for him to choose Bardem in that sense.
Antonio Banderas did the same thing, because his first middle name is Domínguez and he said that Antonio Domínguez was very common and there was another actor with this name already.
