Oooh, I like Sabine. I don't think about it much unless it pops up in a create-a-family game or I am compelled to fish around for an S name, but I do think it's a neat one. How are you pronouncing it? My context of first hearing it was in German but I think I like it either way, probably depending on what it's paired with.
Part of the appeal for me is that it feels so old to me on account of its meaning. So I like it for kind of the opposite reason you do. :-) To me it's like an ancient stone road, you know? Enduring.
I don't tend to be a fan of Isabel but I like it with Sabine, I think. Sort of an updated medieval thing it has going on. I know a new baby Wren Sabina, which I think is kind of charming if not verging on hipster. In that way it reminds me of Simone, although more daring. Some combos I like with it:

Yep, the German has the extra syllable at the end.
I looooove Rohese. It actually solves the only thing that I don't like about its eventual form Rose, which is that it doesn't have that satisfying H sound anywhere in it. No throat in it, you know?
I think Ros- compliments Sabine pretty nicely, now that I see this many of them in a row. :-)
