Victoria/Vittoria - too regal sounding for me
Elizabeth - prefer Elisabeth and Eilis
Katrina/Catriona - Caitriona is ok
Gabriella/Gabrielle - nice but nms

I like all three Irish names you suggested but if it were me, I would go for a name that's easier to pronounce. I know it annoys me when I'm reading something and don't know how to pronounce the names. I would go for something like -
