I had an aunt called Eva. I asked my grandmother where they'd got it from, since my mother had a family name, and she said 'Well, she was our first, and we liked the fact that there are no nicknames for it ... oh, hello Eve!'
So, I suppose it's best to go for Eva and have the option of Eve as a nn, rather than going for Eve and not being able to use Eva, just the juvenile Evie.
My grandmother was Florence, known as Florrie, by the way, and my grandfather was Thomas, known as Tom. So they knew a thing or two about nicknames ...

I love both and can't really decide which I prefer. I guess I'm more likely to use Eva as a first name and Eve as a middle name.

Depends on the pronunciation.
Eve I prefer if it's going to be a long E, although Eva I usually prefer, because I pronounce it ay-va, as in my German cousin Eva.
But in your preference I'd go by Eve.

Eva definitely. I don't like Eva (long e) as much as with the 'ay' sound, but I don't like the sound of Eve at all. Eva sounds better, looks better, and doesn't invite any "Adam & Eve" jokes.
