Caitlin's the best spelling, and as pretty as I think it is, I would never even consider using it because it seems like almost every Caitlin I've ever heard of exists to ruin my life (the only exceptions to that being my friend's sister and a girl who was in my first grade class). Plus, people seem to like it more than Catherine. Personally, I think it they want to follow the Celtic naming trend, use Catriona!
