I like both of the names but prefer Caris as I think it sounds a little more strong and less flowery (in general, but with a few exceptions, I don't really go for flowery names).
Caris makes me think of a lively, curious, outgoing girl while Carissa makes me think of someone dreamy and cautious - two very different impressions! They both make me think of someone quite young, but also work on older people. I imagine someone with dark hair and blue eyes.
I don't think Carissa and Caris sound too similar to Christine and Chris. I particularly like the mother/daughter combo Christine and Caris.
Oh, and I prefer the 'C' spelling to the 'K' spelling.
