The only nickname I really love is Lizzie which I prefer to Elizabeth anyway. It conjours up images of Lizzie Siddall, the Pre-Raphaelite artist and model and also Elizabeth Bennett (who was Lizzy).

I don't mind Beth and Eliza is now growing on me. Bethan is a Welsh diminutive and a nice alternative.
