Amy's been growing on me lately, too! I definitely prefer Amy to any other spelling.
I would pair a longer mn with nn options with simple, sweet Amy.
Amy Josephine
Amy Elizabeth
Amy Margaret (well, maybe not)
Amy Isabelle
Amy Adelaide
Amy Marigold
Amy Estella
Amy Philomena (*swoon*)
Amy Rosalind
Amy Alexandra

Love the name and Amy is my prefered spelling.

I'm an Amy, and in my childhood/adolescence I thought it was too plain. I've kind of gotten over that, but I still don't particularly care for the fact that it is so simple and so 70/80s-trendy (so, kind of dated now).
I went through a period where I wanted my name to be spelled Aimee-- to make it stand out a little more or look more interesting. I guess I would suggest that, or else use Amy as a nickname for Amelia, as another poster wrote.
I always did like the meaning of the name, though.
Some ideas:
Aimee Katharine
Aimee Elizabeth
Aimee Jane
Amelia Faith
Amelia Grace
Good luck!

Hey, I'm an Aimee!
And I'm not a fan. It doesn't age well, I'm afraid.

I think its very 70s/80s/90s but I guess it could work.
