I don't really see how Minnie could be short for that, but I love the name.
I like Cosmina as well, and I wouldn't use Minnie as a nickname (maybe just Mina, if I had to).
I'm against nicknames in general, unless they have a story behind them (as opposed to just being a shorted version of one's name). I have a friend called Anastasia, and everyone but me calls her Ana. I just can't do it. Call it a quirk =D
I also wouldn't use these names unless I had a French/Italian last name. Ambrosine is especially "exotic". =D
