I think it depends on the spelling. Elisabeth is softer, girlier, like a princess, and Elizabeth is still lady-like, but stronger, like a woman's rights activist.
My favorite nn are Elise, Eliza (My Fair Lady always comes to mind), Libby, and Betsy/Betsey, although Zabeth could be fun & I've heard of Lily as a nn for it. I also think that Elsie should be brought back, so this would be my first pick.
Middle names:
I've heard "Adora" used; possible
Lennox or Flannery for girls who want to be feminine but consider Elizabeth overdone; they could always go by their mn
Cecily/Cecile/Cecille/Cecilia, etc.
Virginia
Kattalin (my new discovery--love! A Basque name.)
Trilby (another new one; actually, Trilby Elizabeth would be nice. Heard last in the 1800's.)
Blake/Blair/Harper/Harlow/Langtry/Carrington-those "upperclass" names
Sofia
Moira or Maire; better than the ever uber-popular mn Marie
Anastasia-maybe she'll fall in love with it and use it on her won daughter!

Juliet
Lyric-not as overused as Melody, and softer sounding
Yasmin, Jasmine

Quintessa (sounds so royal!) If used as fn, possible nn Quinn
