I do like Estella, but I prefer the simpler Estelle. I find that the 'stel' sound is very feminine as it is so the added A at the end of Estella makes it a bit frilly. Estelle is great though!
I haven't read Great Expectaions so no, I don't think of it. :P
I can definitely see Estella increasing in popularity since it's so similar to Stella, which I know is already popular in the UK. I can't say the same for Estelle and Esther though. I don't see them becoming really popular any time soon.
From your list I quite like Estella Paz. I think that the mn should be feminine, but a little harsh to offset Estella's saccharine.
