I really like Saoirse, but I agree the spelling would have pronounciation problems. I like this spelling, I think it's different and unique, However if I had to spell it phonetically I'd probably spell it Seersha or Sorsha.

Other than that, I do like it and I'd keep the spelling as Saoirse :)
