I think they are all usable with their given names. Posy is adorable by they way. Bee is great too because I can't stand the nicknames Becky or Becca. Kitty for Caitlin is also adorable.

I love Kitty as a nickname for Catherine, and I'm rather fond of Posy as a nickname for Josephine.

I think Kitty is adorable and all of the other ones are OK... but not the best. Especially Posey since it is another type of flower other than a rose and I think its kind of morbid since it reminds me of the song "a pocket full of posey," which describes how people used the posey scent to cover the stench of the plague. sorry I just tore apart "Posey"...

I don't see Lili coming from Alice at all. Posy for Rose is a stretch, but I like it for Josephine. Kitty for Caitlin is fine, Bee for Rebecca is a stretch. Mimi I just don't like.

Alice-Lili - I don't think this works, because the "Li" isn't its own syllable. It seems very contrived. Plus, I don't think Alice needs a nickname.
Rose-Posy - I guess it kind of works, but I would see it as one of those nicknames that evolves over time, i.e. she gets called Rosie, then Rosie-Posy, then Posy. I would find it odd if it were a predetermined nickname. I also think Posy would work better on a longer version of Rose, such as Rosemary or Rosamund.
Caitlin-Kitty - This one I think works nicely. Caitlin is the Irish form of Catherine, and Kitty is a nn for Catherine, so it fits very well. I do hope you're pronounced Caitlin as "KAHT-leen" though.
Rebecca-Bee - I don't think this works well. The sound "bee" isn't in Rebecca. I would expect Bee to be a nickname for a name that started with B, had a "bee" sound in it, or meant bee, like Melissa. Then again, if you really, really love both names, I think it works enough to be used.
Amelia-Mimi - I think the nickname works well, but I personally hate Mimi. Amy, Mia, Lia, and even Mel are much better nicknames for Amelia IMO. But Mimi does work.

Alice-Lili ... I just don't really feel the connection here.
Rose-Posy ... I see the connection, but I think Rose is gorgeous and Posy is ridiculous
Caitlin-Kitty ... Kitty really improves on Caitlin
Rebecca-Bee ... Love the nn Bee but don't see the connection to Reecca
Amelia-Mimi ... Mimi's a little too cutesy, but it could be nice for a sometimes nn

The only one I like is Lili (I prefer Lily) for Alice.
Mimi is okay but the others are just too "cutesy" for my liking.
