Mostly because I really liked the character on Grey's Anatomy, even though I rarely watch that show. Also, my 8th grade English teacher named her daughter this, and from what I know of her, she's a pretty cool kid. It helps that said English teacher is one of my favorite people ever, too. :D
(I don't like it for a boy at all, really. Same with Madison. I guess they both just sound too presidential and stuffy to me on guys. Weird.)
Definitely stick with the Addison spelling. Anything else is far too contrived, IMO.
Out of your combos, the ones I like the best are:

Addison Maria
Addison Claire (this one's probably my favorite)

I definitely agree with your decision to use obviously feminine middle names for Addison, since it's already pretty masculine by itself.
ETA: Though you might be warned that Addison has seriously jumped in popularity since 2005, surely in part as an alternative to Madison. If you're concerned about your daughter having to go by Addison B. in school, or whatever, this probably isn't the best name to choose. I can imagine that it'll get confused with Madison a ton, too. You probably already know all that, but I just thought I'd point it out. :)
