Well ... I always advise against choosing a full name around the favoured nickname. Plenty of kids will insist on their full name when they're old enough. (I downright refused to answer to Nell, which my mother wanted to call me.)
That aside, I like both Jocelyn and Josephe. I'd pronounce the later joe-SEFF. Josephe is probably more suited to the nickname Joey, since it actually has the 'joe' sound in it and Jocelyn doesn't. (For Jocelyn, I much prefer Joss.) I also like Josepha, which I say 'joe-SEFF-ah'.
