I like Meredith Cait best. It's a nice name and indeed not so popular. I think Elizabeth and Katherine are just too common (at least they would be too common for me to use). My personal style is a bit more unusual than the names you have picked out, for me Elizabeth and Katherine are indeed a bit boring. Meredith certainly isn't.
btw. Are you still looking for suggestions? (I thought I'd ask before I start making a list with names that would go nicely with mn Cait or Leigh :P)

At nearly 32 I've found that my taste has changed a lot. I used to love names like Ariana, Juliet, Guinevere, Chloe, Arwen, Lorien, Ella, Elora, etc...kind of light airy fairy names. But, as I aged and it came down to REALLY putting these names on a person (and working with a hubby's opinions), I've changed a lot.
Some of my favorite combos I just won't really use?
Ella Lorien
Chloe Guinevere
Aubrey Juliet
That's more MY style...but not sure they'd serve a girl well over her lifetime. I am drawn to stronger names these days.
